This is a really yummy egg salad that is easy to make especially if you use Eggies to boil your eggs. It doesn’t use any mayonnaise so it is low on fat. This is a healthy way to enjoy egg salad.


2 hard boiled eggs
3-4 tablespoons finely chopped pickled cucumbers
1-2 tablespoons finely chopped onions
3-7 finely chopped pickled garlic
1 tablespoon of the oil from the pickled garlic
1-2 tablespoons ketchup
salt and pepper to taste

Preparation Method

Hard boil the eggs and when they are cold peel them. If you have trouble with or want to do it faster then consider using Eggies as they really speed up the boiling and peeling of eggs. Cut the eggs into very small cubes – the Eggies egg slicer is really good for this. Then stir all the ingredients together in a bowl and add salt and pepper as you like.
