Here is a really easy recipe for blueberry muffins you can even use it in a Bake Pop’s pan if you want, learn more about Bake Pops here. If you like blueberry muffins then I you should really try this recipe.
- 50 g butter (shortening can be used but I prefer butter!)
- 1 egg
- 3 cups milk
- 300 g flour
- 1 teaspoon baking powder
- 1/2 tsp salt
- 100 g sugar
- 100 g blueberries (preferably fresh)
Preheat your oven to 200 degrees. Melt the butter in a pot. Beat the egg lightly together and mix it with milk and butter.
In another bowl mix 3/4 of the flour with the salt and sugar. Stir the flour quickly with the eggs, margarine and milk to make batter. The rest of the flour is mixed with the blueberries, which is then carefully mixed into the batter. Spread the batter into a muffin pan and bake for 25-30 minutes.
