I recommend you try this filled egg omelet it tastes great and really fills you up. You won’t be wanting any hard boiled eggs after this dish but in case you would then read this Eggies review as it can make your life a lot easier.
- 8 slices bacon
- 1 onion, diced
- 3-4 cold cooked potatoes, diced
- Some leftover cold cooked vegetables cut into small pieces approx. 1 dl.
- 4 large eggs (or 5-6 small)
- 2 tbsp. flour (or potato flour)
- 2 dl. milk
- salt and pepper
For the garnish:
- tomatoes wedges
Fry the bacon in a pan. After it is fried use some tissue-paper to remove some of the grease.
Pour out some of the fat from the pan and fry the onions in the rest.
Add the potato cubes and vegetables and let it fry a while.
The eggs are whipped together with flour, milk, salt and pepper and are then poured over the potato mixture in pan.
Let the omelet stiffens at low heat. Lift it up a bit once in a while so the liquid can run down under the omelet.
The omelet can if you want be turned over on a lid, and fried on the other side as well.
Garnish with tomato wedges, cut chives and bacon slices.
