Vegetarian Nut Pâté

I have made this nut pâté ever since I had a vegetarian friend over for Christmas dinner several years ago. I just fell in love with it. At Christmas I eat it with the traditional food, it is really good with cranberries. This nut pâté is also great all year long I love to eat it on a slice of bread with some pickles.

The recipe has not changed one ounce since I first made it back in 2001, due to that the recipe works perfectly just like it is! A lot of people have enjoyed this recipe for my Christmas dinners and they have all been just as enthusiastic about it as I am. I’ve served it for so many people, and virtually all have loved it! If you are a new vegetarian or vegan and are unsure whether to bother with pâté, you should try this next Christmas. There is no reason to sit with some Christmas food you’re not crazy about, but every reason to impress your family with this delicious green food.

The ingredients of pâté are few and simple, but they complement each other perfectly! Because the ingredients are so simple, and since I basically only make pâté up to Christmas, I prefer to use good organic raw materials for the purpose.


450 g celeriac
350 g mushrooms
100 g onions
200 g hazelnuts
3 tbsp. soy sauce
2 tbsp. herbal salt
Freshly ground pepper
150 g peeled apples cut into slices
100 g whole prunes or sliced ​​in half

Preparation Method

Start by peeling of celery and cut then into large cubes. Boil them in salted water until tender. Then pour the water from the celery (use the celery water for vegetable soup. Save it if necessary in the freezer until you need it) and mash the celery cubes with a hand blender.

The hazelnuts are blended in a blender and added to the mass. I usually like to split the nuts into two groups and blend one half slightly finer than the other.

The onions (white or red) and mushrooms (white or brown) are chopped or blended finely and add too.

Finally taste the mixture and add herb salt, pepper and soy sauce accordingly. Don’t worry if the batter is not immediately moist. The pâté becomes very soft and delicious – without added liquid.

Half of the batter should be placed in the bottom of an ovenproof dish. Put the apples and prunes alternately on top of the pâté and then add the second half of the mixture on top .

Bake at 200 degrees Celsius in the center of the oven for approximately 45 minutes. The smell of the pâté is fantastic! … And once it spreads throughout the kitchen, you know it will soon be Christmas!

Chocolate-Strawberries With Yogurt-Custard

This is a nice romantic dessert that only takes minutes to make. If you like strawberries then you might also like our asparagus and strawberry salad, try it out.


  • 2 boxes of sweet strawberries
  • Dark chocolate 225 g
  • 1/2 liter whipping cream
  • 2 dl plain yogurt
  • 2 tsp. vanilla sugar
  • 4 pasteurized egg yolk
  • approx. 4-5 tbsp. sugar

Garnish: Mint leaves

Preparation Method

Melt the chocolate gently then dip the strawberries in the melted chocolate. If this is difficult you can insert a skewer in one end of the strawberries then it is easier to dip them in chocolate. Put them with the top up on a piece of wax paper and let the chocolate harden completely.

Whisk the egg yolks, sugar and vanilla sugar well together.
Whip the cream really stiff, stop just before it is too much. Mix this with the yogurt and add the egg mixture. Season to taste if you would  like the cream a little sweeter.

Served the strawberries on a platter and put the cream on the side. Garnish with mint leaves.

Heavy Chocolate Muffins

This is a recipe for some very chocolaty muffins. They are easy to make and can be baked in a Bake Pops pan if you want to make round chocolate cake pops. Read a full review of Bake Pops here.


  • 125 g of soft butter
  • 170 grams of sugar (about 1 ¾ cups)
  • 2 eggs
  • 250 g flour (about 4 ½ cups)
  • 1 ½ teaspoons baking powder
  • 2 teaspoons grated orange peel
  • 100 g chopped dark chocolate
  • 50 g chopped nut kernels
  • 1 ½ cups whipping cream


  • 150 g icing sugar (about 1 ½ cups)
  • 2 ½ tablespoons orange juice


  • Small orange triangles

Tips: Garnish muffins with 200g melted dark chocolate instead of orange glaze

Preparation Method

Stir the butter and sugar well together. Whisk the eggs in one at a time. Beat well between each.
Mix flour, baking powder, orange peel, chocolate and nuts together and mix into the butter mixture alternate with the cream.
Spread the batter into paper muffin cups and set them on a baking sheet or you can use a Bake Pops pan.
Bake in middle of oven for approx. 12 minutes at 200 °.
When the muffins are cool decorate with the icing and orange triangles.

Thai Pumpkin Soup

pumpkinIf you like pumpkin then you will definitely like this pumpkin soup from Thailand. It not only tastes great it is also quick and easy to make. If you like this dish why not try a Thai Omelet it is just as easy to make and really delicious.


1 pumpkin (Hokkaido) or 1/4 large pumpkin
1 onion,
1 red sweet pepper,
3 dl. water,
2 dl. cooking cream or Greek yogurt
2 tbsp. brown sugar
1-2 tsp. cumin,
a little grated fresh ginger or a dried ginger to be cooked whole
salt and pepper

Preparation Method

Cut the rind of the pumpkin and remove seeds. Chop it into cubes, do the same with the sweet pepper and onion. Boil for 15 minutes in the water with brown sugar, ginger, cumin, salt and pepper. Blend it until it is even let it boil again and add cream or yoghurt. Taste it, if necessary add more cumin, salt and pepper.

Serve it with a dollop of whipped cream or yogurt and some chopped up spring onions as garnish.

Asparagus And Strawberry Salad

This is a great summer and autumn dish that combines some of the seasons berries and vegetables you can find out more about the different fruits and vegetables that are in season in autumn in this article, Nature Is A Treasure Trove.


  • 1 bunch asparagus
  • 1 tray 500 g of strawberry
  • 100 g of almond
  • ½ bag of tarragon
  • ½ cup white wine vinegar
  • 1 cup acacia honey

Preparation Method

Blanch the asparagus for 1 minute in boiling water. Then cut the asparagus in thirds.

Clean the strawberries and cut them into halves or thirds. Mix them with the asparagus.

Roasts the almonds for ca. 5 minutes on a hot, dry pan and sprinkle over salad.

Tarragon Vinegar: Mix the white wine vinegar with the tarragon 1 week before it should be used. Keep it in an airtight container in the refrigerator.

On the day you serve the salad mix in the Acacia honey in the dressing and pour over the salad.

Nature Is A Treasure Trove

When autumn is coming and it rains and is windy outside. But outside in nature or the greenhouse, this time however, is a positive period because this is the season for lots of fruits, nuts, mushrooms and so on, in other words, a treasure trove of nature’s delicious ingredients all for you and me.

Sweet lovely fruits like apples, plums, pears, we find in abundance in the gardens at this time of year. It’s a good time for these fruits, except some may have marks from heavy rain and hail, but this cannot be tasted in lovely desserts like apple pie, apple crumble cake, old-fashioned apple pie, porridge or you might try some more unconventional things like using apples for jam, stewed with horseradish as an accompaniment to venison or an apple chutney. If you have a juice centrifuge apples can also be used for a delicious freshly made juices, for example, try to use apples with carrots, beets, celery and ginger in the juicer, and you get a super healthy juice packed with vitamins.

Plums are delicious to use for trifle, jam, porridge or try to soak the whole plums without stones in Madeira a few weeks or longer, and serve with a dollop of whipped cream or a delicious vanilla ice cream. Pears can also be used creatively in salads, for example, with arugula, blue cheese and raspberry vinegar.

Blackberries, blueberries and elderberries are often found in the wild, and they are very expensive to buy, so it is good to get out and look for good places to pick these berries. Blackberries are excellent for jam, muffins, pies, or just fresh with vanilla ice cream and a piece of brownie, or blackberry sauce for venison, the possibilities are endless. The same applies to blueberries use them like blackberries in baked goods, pickled or again in a sauce with port wine for game meat. With elderberry you can make delicious elderberry drinks or a soup with apple pieces, it tastes good both hot or cold and is great to warm you with when you come in from the cold outside. Nuts can be found in the wild at the moment, this is especially hazelnuts and walnuts. Nuts are very healthy to put on the table as snacks, since it is the healthy fats you get from nuts. Otherwise, nuts can be used in most cakes and pastries with success, but also try to blend 10-15 nuts with frozen berries, a little honey and soy milk or yogurt and drink a healthy smoothie for breakfast or snack.

Mushrooms are a chapter in itself, because currently the woods are full of them, but this requires a little knowledge before you begin. So a good idea is to sign up for an arranged mushroom picking trip with an expert in the field. There are many such trips at this time of year, and on one you can learn the most common edible mushrooms you need to know. Thai Omelet – Kai Djieow

Here is the recipe for a Thai style omelet. If you like Thai food I think you will like this. It is quick and easy to make and you can add extra meat, chicken and seafood to it. If you like this you might also like this recipe for filled omelet.


  • 4 eggs
  • approx. 3 tablespoons vegetable oil (grapeseed oil)
  • 1 tablespoon fish sauce (Nahm Plah)
  • 1 tablespoon sweet oyster sauce (Nahm Mon Hoi)
  • 2 spring oninions
  • 2 tomatoes
  • 1 red onion
  • a bunch of fresh coriander leaves

Preparation Method

Whip the eggs together really well.
Finely chop the spring onions and the red onions.
Chop the tomatoes coarsely.


Mix all ingredients in a bowl and stir it together.
Heat a frying pan with oil until it is smoking.
Pour egg mixture out to cover the entire frying pan
Turn down the heat and let the omelet bake for approximately 5 minutes.
Turn the omelet over and fry the other side for another 5 minutes.


You can add shrimp or ham to the omelet, which you should cut into small pieces and mix into egg mixture.

Hazelnuts And Coconut Muffins

These hazelnuts and coconut muffins taste great and are easy to make you can even turn them into cake pops using a Bake Pops pan or something similar. Just try them out I am sure you won’t regret it.


  • 2 Eggs
  • 1 ½ cups sugar
  • 2 tablespoons Vanilla
  • 125 g melted shortening
  • 3/4 cup flour
  • 50 g chopped hazelnuts
  • 4 cups coconut
  • 100 g chocolate

Preparation Method

Whip the eggs and sugar together until it is white and fluffy.

Stir in the rest of the ingredients and make sure it get well mixed.

Put the batter in paper muffin cups or a Bake Pops pan.

Bake for 15-20 minutes at 200 degrees Celsius.

A Different Egg Salad

This is a really yummy egg salad that is easy to make especially if you use Eggies to boil your eggs. It doesn’t use any mayonnaise so it is low on fat. This is a healthy way to enjoy egg salad.


2 hard boiled eggs
3-4 tablespoons finely chopped pickled cucumbers
1-2 tablespoons finely chopped onions
3-7 finely chopped pickled garlic
1 tablespoon of the oil from the pickled garlic
1-2 tablespoons ketchup
salt and pepper to taste

Preparation Method

Hard boil the eggs and when they are cold peel them. If you have trouble with or want to do it faster then consider using Eggies as they really speed up the boiling and peeling of eggs. Cut the eggs into very small cubes – the Eggies egg slicer is really good for this. Then stir all the ingredients together in a bowl and add salt and pepper as you like.

Banana Chocolate Muffin Recipe

  • 2 Eggs
  • 150 grams of sugar
  • 200 g flour
  • 2 tsp Baking Powder
  • 100 g dark chocolate
  • 2 ripe bananas
  • 100 g Melted butter

Preparation Method
Beat the eggs and sugar until white and fluffy. Mix flour and baking powder. Chop the chocolate coarsely and mix with flour, then butter and finally the mashed bananas. Put the batter into muffin cups or a bake pops pan. Bake at 175 degrees Celsius for 20-25 minutes. Turned upside down on a rack when they have cool down.

Filled Egg Omelet

  • 8 slices bacon
  • 1 onion, diced
  • 3-4 cold cooked potatoes, diced
  • Some leftover cold cooked vegetables cut into small pieces approx. 1 dl.
  • 4 large eggs (or 5-6 small)
  • 2 tbsp. flour (or potato flour)
  • 2 dl. milk
  • salt and pepper

For the garnish:

  • tomatoes wedges
  • chives

Preparation Method

Fry the bacon in a pan. After it is fried use some tissue-paper to remove some of the grease.
Pour out some of the fat from the pan and fry the onions in the rest.
Add the potato cubes and vegetables and let it fry a while.
The eggs are whipped together with flour, milk, salt and pepper and are then poured over the potato mixture in pan.
Let the omelet stiffens at low heat. Lift it up a bit once in a while so the liquid can run down under the omelet.
The omelet can if you want be turned over on a lid, and fried on the other side as well.
Garnish with tomato wedges, cut chives and bacon slices.

Blueberry Muffins Recipe

  • 50 g butter (shortening can be used but I prefer butter!)
  • 1 egg
  • 3 cups milk
  • 300 g flour
  • 1 teaspoon baking powder
  • 1/2 tsp salt
  • 100 g sugar
  • 100 g blueberries (preferably fresh)

Preparation Method
Preheat your oven to 200 degrees. Melt the butter in a pot. Beat the egg lightly together and mix it with milk and butter.

In another bowl mix 3/4 of the flour with the salt and sugar. Stir the flour quickly with the eggs, margarine and milk to make batter. The rest of the flour is mixed with the blueberries, which is then carefully mixed into the batter. Spread the batter into a muffin pan and bake for 25-30 minutes.

How long to cook the egg? That is the big question that scientists at the Department of Chemistry at the University of Oslo have found the answer to. If they wanted to make it easy to boil an egg they could have used Eggies. They have calculated a formula to guarantee you the perfect egg. By entering information such as the egg’s circumference and if the egg should be hard boiled or soft boiled, then the calculator can figure out how long the egg should boil.

Please check the product label on the package as most of the marzipan, we find in the supermarket today is made from apricot kernels, since these are cheaper. Marzipan from apricot kernels have a tendency to be drier than marzipan which is made entirely of almonds.

To get the most beautiful Easter eggs, it is important that tempers the chocolate, as it gives a brighter and shinier results. This is done by chopping up the chocolate, then one half is melted in a water bath. Thereafter you add the remaining chocolate, which cools the chocolate down.

Which cocoa percentage is best, this obviously depends on personal taste, but if you use a chocolate with a cacao percentage of around 70 percent, you are well on your way as chocolate with higher cocoa percentage may be too bitter for some tastes. Should the Easter eggs be eaten by children, a cocoa percentage at around 50 percent would be sufficient.

In my opinion the pans work great and as promised. Unfortunately I am human and like to complain so here it is. The biggest problem I found with Bake Pops is the sticks; you only get eighteen sticks which is too few especially if you like to give away your cake pops as gifts. But don’t worry as I found that my local craft shop sold similar sticks. These sticks are usually used for lollipops but they work just fine and let you make as many cake pops as you want.

One thing I really like is that you can season your eggs before boiling them. For this, I can come up with a whole bunch of new recipes I want to try out. Another thing you’ll like is that you can use bottled egg whites to make your boiled eggs, this makes for some healthy boiled eggs for those with high cholesterol.

What About The Eggies Scam That The Internet Talks About?

As Seen On TV Now some people complain and say that they don’t work. They even even refer to it as an Eggies scam. Now I almost agree with them, they don’t work if you use them in a wrong way. And this is the issue; many people just don’t take the time and read the instruction.

First of they need to be coated with a cooking spray so the eggs can easily slide out. Secondly always make sure that the containers are sealed tightly so the eggs can leak out or water get in. Thirdly don’t open them until they have had time to cool down. Now this might seem like common sense to you but there are several negative Eggies reviews that complained about getting burned by opening them right after taking them out of boiling hot water.

Now there are two complaints that I have to agree on. The first is that the hole you pour the egg through is small and the yolk can get stuck spilling egg whites on the counter. Good food doesn’t need to cost an arm and a leg

Chef Daniel Jeffersen gives his idea on what and how to cook a great dish for less than 20 dollars, a dish that will awaken joy in even the most discerning diners.

Is it the end of the month and your bank account is almost empty, then don’t worry if you have invite friends, in-laws or your sweetheart to dinner. You can always make some pasta as explained in this Pasta Boat Review. Even with a tight budget, it is possible to conjure up a delicious dinner, because good food doesn’t need to cost a lot. Explains Chef Daniel Jeffersen.

“You can eat at various gourmet restaurants and spend a fortune, but it does not necessarily mean the food was any good. For me, good food is something that starts with the choice of raw materials and the way you use them, “he says.

Daniel Jeffersen tries whenever possible to eat healthy and varied both on the job and at home by himself, it is important that all the ingredients are fresh and homemade. This applies to everything from the essence that makes béarnaise sauce to taste like it came from a bistro in France, to the bread and jams, he puts on the table at home.

It is also evident in his proposal for a delicious dinner for less than 20 dollars, which consists of a pot roasted chicken with beer, which is eaten with new potatoes. Besides beer the recipe also requires honey, carrots, scallions and bacon to be added. Daniel Jeffersen explains why the choice fell on exactly this dish:

“It is a dish we make often at home, and it is a nice dish that is filled with lots of flavor, and you use almost all the chicken.”

According to the chef, this delicious dinner first and foremost is cheap because it is a dish that is not full of ingredients. At the same time you get full value for your money and you get the full effect of the flavors, the combination of the smoky bacon, the sweetness from the honey and the bitter, caramel-like flavor from the beer.

Daniel Jeffersen also emphasizes that by using the hull from the chicken to make stock and getting the carrot peels and the tops from the spring onions into the pot rather than discarding them, saves you money on the ingredients that you would need to buy to give flavor to soup.


To make Daniel Jeffersen chicken with beer, you have to debone a chicken, which is then split into four pieces. The soup is made by first browning the chicken hull in a little butter in a pot and then you season it with salt and pepper. Pour one liter of water into the pot; bring the soup to a boil and remove any impurities. Peel four carrots and remove the tops of eight scallions. The tops and the peel are added to the soup. Leave it to simmer for about two hours then filter it and it is ready for use.

Cut 200 grams of bacon into cubes and fry in a pan with a lid until crisp. Remove from the bacon from the pan and brown the chicken pieces in the fat and sprinkled with salt and pepper. Add 3 tablespoons of honey, which should be allowed to bubble up to let the flavor, penetrate into the chicken. Add 2-3 cups of beer, and again let the liquid boil. Let it simmer for approximately five minutes, add the chicken soup and let it all simmer for about 30 to 40 minutes.

When the chicken pieces are done, they removed and wrapped in tin foil. The liquid is sieved and boiled in a little bit. Boil the carrots until tender in the liquid, and do the same with the spring onions. When serving put the bacon in the bottom of a deep bowl in this is added a little soup. Add a few onions, a carrot and finally a piece of chicken and serve with new potatoes.

Bring Your Children Into The Kitchen

childSpend some quality time with your kids while you at the same time cook some delicious food. Home economics teacher Kim Jackson gives her tips on how both young and old can have a good experience in the kitchen.

It can be hard to make new indoor weekend activities for the youngest family members after months of snow and cold. When all the board games have been played ad infinitum, and the family’s Playstation or Wii has been running non-stop since Christmas, it might be an idea to look somewhere else – more specifically towards the kitchen.

According home economics teacher Kim Jackson, there are many advantages in involving children in cooking, for besides that they learn to cook, most children likes to know that there is a need for them in the family.

“What can confirm this is than that by letting the children help with cooking they both get a great challenge and get to do something fun, even if it is only the easy part of the cooking the children feel they are part of helping the family.  After all we must have something to eat and it is good to learn that we can help each other in the family, “she explains and emphasizes that even the family’s youngest children can join in when working in the kitchen.

While the three-and four-year-old can help peel the carrots, serve food and stir cake batter, the children from the age of five and up can help by cutting and chopping vegetables, measuring ingredients and give a hand with the dishes.

And of course they should not walk around with dangerous objects such as knives, hot pots and pans, “she says.

Another important aspect is hygiene. Kim Jackson emphasizes that it is important to show them how to wash hands correctly so they can see how they do it.

“When all the rules are incorporated then everyone can join in,” she says.
