This is a great pie that is easy to make and tastes really good. It is vegetarian but you can easily add some ham or other kind of meat to it if you like.
100 g. margarine
150 g plain flour
50 g rye flour
½ tsp. salt
3-4 tbsp. cold water
200 g onions
300 g whole spinach
100 g feta cheese, diced
2 ½ cups. sour cream 18%
1 pinch. grated nutmeg
150 g grated cheddar cheese (half to sprinkle over)
A little oil for frying
salt and pepper to taste
Chop the margarine into the flour. Add salt and water.
The dough is made easily and quickly; let it rest cold for an hour.
Fry the sliced onions in a little oil and let them cool. ( Use a good and non-toxic pan like OrGreenic, here you can get some more information about OrGreenic)
The spinach is steamed and then mixed with the feta cheese, beaten egg, sour cream and half the grated cheese. Season the mixture with nutmeg, salt and pepper.
Line a greased pie dish with the dough. Spread the filling in it. The rest of the grated cheese is sprinkled over.
Bake the pie at 200 degrees Celsius for approx. 40 minutes.
Garnish the pie with small cherry tomatoes and fresh spinach leaves. The pie is vegetarian, but you can either mix a little ham or salmon in it if you want. You can also serve some meat or fish with it. The pie is great for a summer buffet.
